Your proposed tire sizes are valid. 200/55 will give you more agility by changing your geometry a bit. The wheels will handle those sizes as well.
More concerning is your actual tire choice. Which tire are you using? SC2 is a compound used for the Superbike Slicks and the Supercorsa SC series DOT race tires. Both of these are racing tires, designed to be used with warmers. If this is your first track day, I sincerely doubt you'll be working the tires hard enough to keep them at operating temperature, which will likely result in them performing worse than street tires.
A far better Pirelli for your application will be the Supercorsa SP. This is their highest performing street/track tire, and offers significant levels of grip and stability without the need for warmers or expert pace. Same sizes to meet your needs as well.
